When you get a nice-sized fish, the chances are that they have some nice sizable cheeks on them. Those cheeks are like little tasty scallops. However the fish tastes, the cheeks taste that much better.

This works for both freshwater and saltwater fish. Typically the bigger fish have the bigger and better checks.

Today we’re using a nice sized bluefish as the example. The cheek is located behind the eye, and on the gill cover.

It’s really simple to get the cheeks. Just run the knife right along the cheek bone and back up. You can easily just pull the cheek flesh off of the skin with your thumb.

Do you take the cheeks off of your fish?
