Perch Recipe - Delicious Perch with Onions
This is one of my favorite ways to prepare yellow perch for the dinner table; it’s a very easy yet very delicious perch recipe.
Ingredients for one serving:
- 6 boneless, skinless perch fillets – washed & paper towel dry
- ½ small cooking onion thinly sliced
- Olive oil
- Butter
- Salt
In a frying pan, add onions and enough olive oil to sauté.
Under medium heat, salt and periodically mix & turn onions until they become golden brown.
While the onions are cooking, prepare another pan & add 1 tbsp butter and a little olive oil to cover the bottom of the pan. Under medium heat, stir to blend butter and oil and add fillets when hot enough. Do not use a lid. After 2 minutes salt and turn fillets and cook for another 2 minutes – add a little more salt if you wish.
Remove fish from pan and place on a plate. Place onions evenly on top of the fillets and enjoy!
